Well, I was wondering if different types of vinegar could have gluten in it.
Rice vinegar has 0% and that is what must be used for sushi rice.
No it doesn't. In most restaurants, yeah, but it's not a requirement that rice vinegar is what is used for sushi rice.
It just has to be a type of white or light-colored vinegar.

I know a family that uses apple cider vinegar.

My family just uses the cheapest white vinegar.

8-| As long as it isn't balsamic, asian black, or darker rice vinegars, it's whatevs.
I worked in sushi fast food, they used vinegar from inverted corn syrup...

Actually they used both... One clear vinegar which I presume is rice vinegar used while cooking, and the yellowish corn syrup vinegar which is a bit viscous used when preparing the rice for sushi.

plain white vinegar is clear.
white rice vinegar is yellow-ish.

dunno about corn syrup vinegar.
