My friend told me that there is a kind of stone which you can hold it and stop your pet from evolution, this is better because you should press B everytime when it is Level up and if you do it, the pet intimacy will be down.
I think that the evolution requires in Touhoumon are not very hard, no other requires except level up or stones. But some Touhous like fairy may evolution to Lily Black if attack power is higher than defense power, to Lily White if attack power is lower than defense power, to Daiyousei if attack power is not higher or lower than defense power.

The Everstone does it - you can get one from prof Oak´s assistant in the Eirin´s Center at the entrance to Rock tunnel (east of Cerulean City, Route 10); I think you need at least 20 different Touhous to get it.
